
The seasons are changing, much to my chagrin. It’s hard to stay sad about summer coming to a close when there are so many delicious one-pot recipes on the horizon, and this one in particular is a family fave. It’s flavorful, full of veggies, and simple to prepare, even on those busy school nights. The best part? You can make the recipe in triplicate or more to feed a huge group!
We love this hearty and healthy recipe so much that we’re making it en masse for a group of around 60 Scouts and their families at our fall family campout next month. It cooks beautifully on a propane stove or over an open fire!
Make sure you serve it up with a nice piece of bread because the leftover sauce and seasonings in your bowl deserve it!


A Scout is thrifty, so I normally buy store branded items when I can, but admit that I absolutely love the Dei Fratelli brand Italian Sauce. It’s delicious, yes, but it reminds me of my all-time favorite movie every time I use it.
