Warm & Cozy Recipes: Crockpot Chicken Pot Pie

When I think of “warm and cozy,” I think about a hot mug of coffee, my fleece-lined slippers, and snuggling the doggo on the couch with a bowl of chicken pot pie. I have had zero success making a pie crust that wasn’t either super dry or crumbly, so when I stumbled across an iteration of this recipe, I was psyched. A tube of biscuits? Seriously?

Yeah, seriously. You’re going to love this recipe, it’s definitely cool weather soul food! Not only is it topped with biscuits, it’s full of delicious veggies. I use the store brand frozen soup veggies, which has every vegetable you love PLUS okra. OKRA, GUYS! Get you some.

Did I mention the smells that fill your house when you make this recipe? If you put this together before leaving for work, what you come home to is next level comforting. It smells the way it feels to get into your pj’s the instant you walk through the door. It’s ridiculous.

Every time I share a crockpot recipe, I feel obligated to talk about the exact appliance that I own. I love my crockpot so much, it’s like my handy, reliable little sidekick that I absolutely cannot live without. I own the 8-Quart Oval Crock-Pot, and I love it for several reasons:

  • it’s ovular, which means it can hold a nice roast or tenderloin without having to cut it down
  • it has a glass lid, as opposed to plastic
  • it’s manual, so I can only get myself in so much trouble with the three temperature settings
