
Anyone else struggling at least seven times a week to make a quick dinner before Scouts or sports that everybody looks forward to eating? The kind of recipe that comes together quickly, warms bellies, and makes for bomb.com leftovers?
Let me introduce you to my mother-in-law’s Mexican Casserole, a regular life-saver over here with my busy family!


Truly, I wish smell-ivision were a thing because I’m getting hungry just editing the pictures.
Believe it or not, this simple casserole is actually very versatile. There are two versions that my family has been inhaling for years now. The Red recipe, pictured above, is the classic version my dear MIL passed on to me many years ago. It’s rich and cheesy, puts off a heavenly aroma, and is an ultimate comfort food. I swapped out a few ingredients to make a Green recipe, which is a little spicier with the zing of lime. I often use ground turkey instead of regular hamburger, and am thinking of letting chicken simmer all day long in the crockpot and shredding it for this recipe in the future. We love them both and, again, the leftovers just get better and better… if there are any. Plus, each one can easily come together at a campsite without much (if any) change to the recipe.
